Ingredients
Casserole
- 1/2 cup butter
- 1 – 40 oz can yams
- 1 cup milk
- 1 tsp vanilla
- 2 eggs
- 1 cup sugar
Topping
- 2 tbsp butter
- 1/2 cup flour
- 1/2 cup brown sugar
- 1 cup chopped pecans
Directions
Preheat the oven to 350
Grease a 8×8 or a 13×9 baking dish.
In a medium saucepan, heat the yams until warm throughout. Remove from heat and drain. Smash yams.
In a medium mixing bowl, beat the eggs. Add the milk, sugar, and vanilla. Mix until combined.
Add smashed yams. Mix until combined.
Pour into prepared baking dish.
Sprinkle with topping (see below) until covered.
Bake at 350 for 35 – 40 minutes.
Serves 8.
Topping
In a small bowl, combine flour and brown sugar. Add butter and combine until pasty. Add pecans (optional) and mix.
